Avocado & Scrambled Egg Toast with Cherry Tomatoes & Red Onion
A fresh, protein-packed breakfast with creamy avocado and vibrant toppings! Ingredients:
2 slices white or whole wheat bread
1 ripe avocado
2 large eggs
1 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
4 cherry tomatoes, halved
2 tbsp red onion, diced
1/2 tsp garlic powder
1/2 tsp lemon juice
1/4 tsp paprika (optional) Step by Step:
Toast the Bread:
Lightly toast the bread slices until golden brown. Prepare the Scrambled Eggs:
In a small bowl, whisk eggs with a pinch of salt and black pepper.
Melt butter in a pan over low-medium heat and cook eggs, stirring gently, until soft and fluffy. Mash the Avocado:
In a bowl, mash the avocado with a fork.
