Mexican Casserole with Ground Beef & Pasta 🇲🇽🧀

Ingredients:

12 oz pasta (penne, rotini, or elbow)
1 lb ground beef
1 small onion, chopped
2 cloves garlic, minced
1 packet (1 oz) taco seasoning
1 can (10 oz) diced tomatoes with green chilies (Rotel)
1 can (15 oz) black beans, drained and rinsed
1 cup corn (frozen or canned, drained)
1 cup salsa
1 cup sour cream
2 cups shredded Mexican cheese blend
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
Chopped cilantro & sliced jalapeños (for garnish, optional)

Directions:

Cook the pasta – Boil pasta according to package instructions. Drain and set aside.
Brown the beef – Heat olive oil in a large pan over medium heat. Add ground beef and cook until browned. Drain excess grease.
Sauté onions & garlic – Add chopped onion and garlic to the beef and cook for 2 minutes until soft.
Season & mix – Stir in taco seasoning, diced tomatoes with green chilies, black beans, corn, salsa, salt, and black pepper. Cook for 5 minutes.
Combine everything – Add cooked pasta and sour cream to the beef mixture. Stir well to coat.
Assemble the casserole – Transfer the mixture to a greased 9×13-inch baking dish. Top with shredded cheese.
Bake – Preheat oven to 375°F and bake uncovered for 15-20 minutes or until cheese is melted and bubbly.
Garnish & serve – Sprinkle with cilantro and jalapeños if desired. Serve hot!
